Red Windsor is a pale cream English cheddar-style cheese produced by Long Clawson Dairy, based in Long Clawson, Leicestershire.[1] It is made using pasteurised cow’s milk marbled with a blend of port and brandy, or occasionally elderberry wine.[2]
The alcohol is said to provide “a sweet counterpoint to the sharp, salty character of the cheese”.[2]
